Asparagus, radish, and pea carpaccio with Dreamfarm Stracciatella and Pink Peppercorns

Ingredients

Ingredients (for 2 people):
• 6 green asparagus spears
• 4 radishes
• 100 g fresh peas (shelled)
• 2 tablespoons extra virgin olive oil
• Salt to taste
• 150 g Dreamfarm plant-based stracciatella
• Pink peppercorns

Preparation

Prepare the asparagus: wash them thoroughly under running water, remove the tough ends, and slice them thinly lengthwise using a vegetable peeler or a sharp knife. Slice the radishes: wash carefully and cut into thin rounds.

Shell the peas: if using whole pods, remove the peas and set aside. Marinate: combine asparagus, radishes, and peas in a bowl. Season with olive oil and a pinch of salt. Let marinate for about 30 minutes at room temperature.

Plate: arrange the marinated vegetables on plates, add spoonfuls of Dreamfarm stracciatella, and sprinkle with lightly crushed pink peppercorns.
