For the chickpea & beetroot burgers

220 g pre-cooked chickpeas (drained and rinsed)

100 g cooked beetroot

50 g chickpea flour (or corn flour)

15 ml extra virgin olive oil

1 small onion

1 garlic clove

½ tsp paprika (optional)

Salt and pepper, to taste

To assemble

Burger buns

Lettuce

1 pack stracciatella Dreamfarm

Cucumbers

Preparation

Blend together chickpeas, beetroot, chickpea flour, olive oil, onion, garlic, and spices until smooth.

• Shape into burger patties and cook in a pan with a drizzle of oil, or bake in a preheated oven at 200°C for 20–25 minutes, flipping halfway through.

• Lightly toast the burger buns in the oven or in a pan.

• Assemble with lettuce, the chickpea & beetroot burger, Dreamfarm stracciatella, and cucumbers.
